As the weather gets colder I am craving warm comfort food. Since I am still living the paleo lifestyle, I need to identify meals that are both satiating and comforting. We all know that traditionally comfort food gets a bad rap but I’ve found a recipe that is delicious, very little work and satisfiying: Creole Shrimp!

This dish was an experiment of sorts because I’ve never cooked in a Crockpot before but it was so simple that I’m sure my Crockpot will get lots of use during the fall and winter! Te recipe is simple. Tomates are the base and celery, onions, bell pepper and garlic are the supporting players.

I simply chopped all of the veggies, crushed and minced the garlic and added it  to the Crockpot.

Next I added 8 oz of garlic tomato sauce and a large can of whole tomatoes. I set the Crockpot on high and let things cook for 2 hours. At that point I added a pound of cleaned frozen shrimp to the pot and let it cook for another hour. Voila! My meal was complete!

I suppose now I am gearing up for Crocktober and I will be on the search for more Crockpot recipes. So far I’ve found Salmon Pesto, seafood chowder, and I’m on the hunt for more! Do you have any favorite Crockpot recipes?

I use my crockpot a lot during the winter too. Here’s one of my got to recipes: Simple Pot Roast
Pot raost beef
can of golden mushroom soup
onion(you could use onion soup mix)
potatoes(optional..I’ve used parsnips)
bag o carrots
sliced mushrooms
1/2 cup of beef broth or water depending on taste

Salt/Pepper the beef and sear it(I use my George Forman)
place all the ingredients in pot with beef on top and pour the mushroom soup and broth on top of the beef. Cook on low for 8-10 hours depending on size of beef.
