Remedy for my sickness- Asian inspired soup

It is so difficult for me to kick up my feet and simply rest- especially when I have my mind on a goal. In this case, I want to be in the best physical shape of my life and become a fitness model. This goal requires me to do strength training to uncover my muscles that have been in hiding since I’m mostly a cardio girl!

However, this week my body decided to put a wrench in my program and my sinus and allergy issues of last week have progressed into what I believe to be a double ear infection and bronchitis. Have I listened to my body? No…last night I went to a Zumba class and after the first move sweat was streaming down my face (more than usual) and I felt like death warmed over. Clearly I need a break so today I’ve been relaxing or rather worrying about what I should be doing and focusing on being sick and unhappy – a terrible cycle.

So, I decided to make soup…..

I was going to simply buy soup but figured I could make a better soup to my own specifications that would really hit the spot. Before you say anything, this was easy! Yes, I did go to the store to pick up a few things but I’m still resting!

Here is the recipe:
1 box organic vegetable broth
1 can coconut milk
1 bag frozen Asian vegetable mix
Thai curry paste (2 tbsp)
Fresh ginger – grated about a tablespoon
1/2 package pad Thai rice noodles
1/2 lb cleaned deveined shrimp
3 large cloves garlic
1 tsp Asian spice
1 head of Broccoli
2 cups collard greens
salt

Method:
In large pot pour vegetable broth, coconut milk and 1 cup of water. Add ginger, garlic, Asian spice and Thai curry. Add salt to taste. Simmer for 5 minutes. Add fresh and frozen vegetables and add noodles. Simmer for five minutes. Finally add shrimp and simmer until shrimp are done (about another 5 minutes).

I added a lot of ginger and garlic – I’m trying to fight this crud! I also am drinking a lemon ginger echinacea beverage. I’m sure I could have made it myself but decided to just make things easy and buy it.
