As I journey to do better and incorporate truly healthy eating onto my active lifestyle I’ve decided to give Paleo eating a whirl again. I have acquired several tools that I’ll need to keep my diet interesting and meet all of my nutritional needs as an athlete (yes, I called myself an athlete, in CrossFit we are all athletes).
I’ve purchased a couple cookbooks, a tool to julienne veggies and yesterday I took a trip to the farmers market to pick up essential veggies, fruits and accompaniments for my meals.
I’ll do a round-up of the books and websites I am utilizing but for now I want to share my yummy lunch with you.
As a lover of Asian food – Chinese, Japanese, Thai, Vietnamese, you name it I like it, I’m always on the lookout for Asian inspired recipes. And Balanced Paleo had a great recipe for Salmon Nori Rolls. Basically you take a sheet of Nori seaweed and fill it with smoked salmon, mashed or sliced avocado (I added some lemon and pepper), cucumber slices, and chopped scallions wrap and enjoy!
This is delicious and filling. I can’t wait to try more recipes soon and share them with you!
