I am delighted to report that healthy eating works! I am down about 11 pounds. I want to say in the last week or so since last Wednesday but I actually am not sure. It may have been since the week before. I know when I got on the scale last week I was not happy with the numbers. But this week I am doing cartwheels! I know this isn’t rocket science but healthy eating works. I think we sometimes forget how easy things can be by simply making a few changes. My major change has been keeping my refrigerate fully stocked with produce and seafood.
I have so many options when I journey to the kitchen and knowing I have food somehow is a reminder that I need to eat. I can’t see letting all of that good and wholesome food going to waste! I’ve purchased recipe books and look at them for motivation. Here is my video talking about my changes.
These mussels were so good! And full of protein and very inexpensive to make. I think we often equate healthy eating with expensive eating but I left the Farmer’s Market spending about the average amount that I would at a regular store and I had so much more produce and seafood! Speaking of produce, a couple times a week I am enjoying a kale smoothie for breakfast.
It is so tasty! In addition to the kale, I had a ton of fresh fruit including mango, nectarine and banana. I sometimes add chia seeds and protein powder too. If I don’t add protein I round out my breakfast with two boiled eggs.
I am so excited to #doBetter! Jamaica is a few months away and my marathon is right around the corner. I need to be in fighting condition and I’m well on the way!
